    Chop the Vegetables

    Chop the onion, bell pepper, and tomato into small pieces, and dice the pineapple into bite-sized cubes.

Cooking

    Sauté the Onion

    In a large pan, heat 2 tablespoons of oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent.

    Add Bell Pepper and Tomato

    Stir in the diced bell pepper and chopped tomato. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.

    Incorporate Pineapple and Curry Paste

    Add the diced pineapple and 2 tablespoons of red curry paste to the pan. Stir well to combine all the ingredients.

    Add Coconut Milk

    Pour in the can of coconut milk, stirring continuously. Bring the mixture to a gentle simmer.

    Add Fresh Basil

    Once the mixture is simmering, stir in the chopped fresh basil. Allow to cook for another 2-3 minutes.

    Remove from heat and serve hot over rice or noodles.
