Prepare the Ingredients
Start by peeling and deveining the shrimp, if not already done. Dice the bell pepper, slice the zucchini, and chop the fresh basil leaves. If using fresh pineapple, cut it into chunks.

Cook the Vegetables
In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced bell pepper and sliced zucchini. Sauté for about 5-7 minutes until they are tender, stirring occasionally.

Add Shrimp and Seasoning
Next, add the peeled and deveined shrimp to the skillet along with the curry powder, salt, and pepper. Cook for another 3-4 minutes until the shrimp turns pink and opaque.

Make the Peanut Sauce
In a bowl, whisk together the peanut butter and coconut milk until smooth. Pour this mixture into the skillet with the shrimp and vegetables. Stir well to combine.

Add Pineapple and Basil
Add the pineapple chunks and chopped basil leaves to the skillet. Stir everything together and let it simmer for an additional 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Remove from heat and serve hot. This peanut shrimp curry can be enjoyed on its own or served over rice or noodles.
