    Prepare the Glass Noodles

    Soak the glass noodles in warm water for 15-20 minutes until they are soft. Drain and set aside.

    Chop the Vegetables

    Thinly slice the onion, mushrooms, carrot, napa cabbage, and celery. Trim the snow peas.

    Beat the Eggs

    In a bowl, crack the eggs and beat them until well mixed. Set aside.

Cooking

    Stir-Fry the Vegetables

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced onion and stir-fry for 1-2 minutes until translucent.

    Add Mushrooms and Carrots

    Add the sliced mushrooms and carrots to the skillet. Stir-fry for another 2-3 minutes until they begin to soften.

    Incorporate Napa and Snow Peas

    Add the napa cabbage and snow peas to the skillet. Stir-fry for an additional 2 minutes.

    Add Celery

    Stir in the sliced celery and cook for another minute.

    Add Glass Noodles

    Add the soaked glass noodles into the skillet with the vegetables. Toss everything together.

    Add the Sauce

    In a small bowl, mix together the soy sauce, oyster sauce, sugar, white pepper, and sesame oil. Pour this sauce over the noodles and vegetables in the skillet, mixing well to combine.

    Add the Eggs

    Push the noodle mixture to one side of the skillet. Pour the beaten eggs into the empty side of the skillet and scramble them until fully cooked. Mix the scrambled eggs with the noodle mixture.

Garnishing

    Transfer the Pad Woon Sen to plates. Garnish with chopped green onions and cilantro. Serve hot.
