    Soak the Rice Noodles

    In a large bowl, soak the rice noodles in warm water for about 30 minutes until softened. Drain and set aside.

    Prepare the Sauce

    In a small bowl, mix together the tamarind paste, fish sauce, brown sugar, and sriracha sauce until well combined. Set aside.

Cooking

    Cook the Noodles

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the soaked rice noodles and stir-fry for about 2-3 minutes until heated through.

    Add the Sauce

    Pour the prepared tamarind sauce over the noodles and stir well to coat the noodles evenly. Cook for an additional 2 minutes.

    Scramble the Eggs

    Push the noodles to one side of the skillet. Crack the eggs into the skillet and scramble them until fully cooked, then mix them into the noodles.

    Add Vegetables

    Add the bean sprouts and chopped scallions to the skillet. Stir-fry for another 2 minutes until the vegetables are tender but still crisp.

    Serve

    Remove the skillet from heat. Serve the Pad Thai garnished with crushed peanuts and additional scallions if desired.
