    Prepare the Vegetables

    Wash and slice the bamboo shoots into thin strips. Trim the ends of the string beans and cut them into 2-inch pieces. Remove the seeds from the bell peppers and slice them into thin strips.

    Prepare the Sauce

    In a bowl, combine the coconut milk, red curry paste, soy sauce, sugar, and lime juice. Mix well until the curry paste is fully dissolved.

    Sauté the Vegetables

    In a large pan or wok, heat the vegetable oil over medium heat. Add the bamboo shoots and cook for 2-3 minutes until slightly tender. Then add the string beans and bell peppers, stirring frequently for another 3-4 minutes until the vegetables are tender-crisp.

    Add the Sauce

    Pour the prepared curry sauce over the sautéed vegetables. Stir well to coat all the vegetables evenly. Bring to a gentle simmer and cook for 5-7 minutes, allowing the flavors to meld together.

    Finish with Basil

    Once the sauce has thickened slightly, add the basil leaves and stir for an additional minute until they are wilted and fragrant.
