Prepare the Noodles
Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions, usually about 4-6 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.

Prepare the Vegetables
While the noodles are cooking, rinse the bean sprouts under cold water. Chop the scallions into thin slices, separating the white and green parts. Roughly chop the fresh cilantro.

Prepare the Broth
In a large pot, add the vegetable broth, minced garlic, and grated ginger. Bring to a simmer over medium heat. Stir in the soy sauce and season with salt and black pepper to taste.

Combine Ingredients
Once the broth is simmering, add the prepared rice noodles, bean sprouts, and the white parts of the scallions into the pot. Stir gently and let cook for an additional 2-3 minutes until everything is heated through.

Finishing Touches
Remove the pot from heat. Squeeze the juice of the lime into the soup and stir. Taste and adjust seasoning, if necessary.
