Preparation

Prepare the Shrimp
Peel and devein the shrimp, then rinse under cold water. Pat dry with a paper towel.

Make the Sweet and Sour Sauce
In a small bowl, combine sugar, tamarind paste, fish sauce, ketchup, lime juice, and water. Mix until well blended and set aside.

Prepare the Crispy Rice Noodles
Heat vegetable oil in a deep pan over medium heat. Once hot, fry the crispy rice noodles until they puff up and become golden brown. Remove them and drain on paper towels.

Cook the Shrimp
In the same pan, remove excess oil leaving about a tablespoon. Add the shrimp and cook for about 2-3 minutes or until they turn pink and opaque. Stir occasionally.

Combine Shrimp and Sauce
Once the shrimp are cooked, pour the sweet and sour sauce over them. Stir well to coat the shrimp in the sauce and cook for an additional 1-2 minutes until heated through.

Add Crispy Noodles
Remove the shrimp and sauce mixture from heat. Gently fold in the crispy rice noodles until they are well combined with the shrimp and sauce.

Plate the Dish
Serve the Mee Grob on a large plate or platter. Garnish with chopped green onions, chopped cilantro, and sprinkle chili flakes on top for extra heat if desired.
