    Prepare the Ingredients

    Thinly slice the onion, carrot, and green bell pepper. Mince the garlic. Chop the spring onions into small pieces. If using shrimp or chicken, cut into bite-sized pieces.

    Cook the Noodles

    Bring a pot of water to a boil. Add the egg noodles and cook according to package instructions until al dente, usually about 4-5 minutes. Drain and set aside.

    Sauté the Aromatics

    In a large pan or wok, heat a tablespoon of oil over medium heat. Add minced garlic and sliced onions, and sauté for 2-3 minutes until the onions are translucent.

    Add Vegetables and Protein

    Add the sliced carrots and green bell pepper to the pan. If using shrimp or chicken, add it now as well. Stir-fry for about 3-4 minutes until the protein is cooked through and the vegetables are tender-crisp.

    Combine with Noodles and Sauces

    Add the cooked egg noodles to the pan with the vegetables and protein. Pour in the oyster sauce, sweet soy sauce, soy sauce, and chili sauce. Toss everything together and stir-fry for an additional 3-4 minutes, making sure the noodles are well coated with the sauces.

    Season and Serve

    Taste and season with salt and black pepper as needed. Remove from heat. Serve hot, garnished with chopped spring onions, lime wedges, and coriander leaves.
