Method

Prepare Sticky Rice

    Soak the Rice

    Rinse the glutinous rice under cold water until the water runs clear. Then, soak the rice in water for at least 4 hours, or overnight for best results.

    Steam the Rice

    After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam the rice over boiling water for about 30-40 minutes, or until the rice is tender and sticky.

    Season the Rice

    Once cooked, transfer the sticky rice to a mixing bowl. Add 1 tsp of salt and mix well. Let it cool slightly.

Prepare Coconut Sauce

    Combine Ingredients

    In a saucepan, combine 1 cup of coconut milk, 1 tablespoon of sugar, and a pinch of salt. Heat over medium heat, stirring until the sugar dissolves. Do not bring to a boil.

    Reserve Sauce

    Remove half of the coconut sauce and set it aside for drizzling over the finished dish.

Prepare Toppings

    Slice the Mango

    Peel the ripe mangoes and slice them into thin wedges.

    Toast the Sesame Seeds

    In a small pan, toast the sesame seeds over medium heat until golden brown, stirring frequently to prevent burning.

Assemble the Dish

    Plate the Sticky Rice

    On a serving plate, place a portion of the sticky rice.

    Add Mango and Sauce

    Arrange the mango slices on top of the sticky rice and drizzle with the reserved coconut sauce.

    Garnish

    Sprinkle the toasted sesame seeds over the top for added flavor and crunch.
