Shrimp Preparation

    Marinate Shrimp

    In a bowl, combine the shrimp, lime juice, minced garlic, and salt. Let it marinate for about 15 minutes.

Batter Preparation

    Make the Batter

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, cold water, and salt until smooth. Set aside.

Vegetable Preparation

    Prepare the Vegetables

    Slice the onion and bell pepper into thin strips. Finely chop the lemongrass and set all vegetables aside.

Chili Sauce Preparation

    Make the Chili Sauce

    In a bowl, mix together the chili sauce, honey, and lime zest until well combined.

Frying Shrimp

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

    Fry the Shrimp

    Dip each marinated shrimp into the batter, letting any excess drip off, then carefully place it in the hot oil. Fry for 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve

    In a serving dish, place the fried shrimp on top of the sliced onions, bell peppers, and lemongrass. Drizzle with the chili sauce.
