Prepare the Rice Noodles
Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until tender, usually about 5-7 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Vegetables
While the noodles are cooking, slice the red bell pepper into thin strips. Chop the scallions, keeping the white and green parts separate. Rinse the fresh basil and cilantro under cold water and roughly chop.
Making the Coconut Red Curry Sauce

Combine Sauce Ingredients
In a medium saucepan over medium heat, add the coconut milk and red curry paste. Whisk together until well combined. Add lime juice, fish sauce, and sugar, stirring to incorporate. Simmer for about 5 minutes until slightly thickened.
Cooking the Shrimp

Cook the Shrimp
In a large skillet, heat a small amount of oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Season with salt and pepper to taste.
Combining Ingredients

Mix Everything Together
Once the shrimp are cooked, add the rice noodles, red bell pepper, and the coconut red curry sauce to the skillet. Toss everything together and cook for an additional 2-3 minutes until heated through and the bell pepper is slightly tender.

Serve
Remove from heat, add the chopped basil and cilantro, and toss gently. Serve immediately, garnished with scallions.
