Preparation of Shrimp

    Marinate Shrimp

    In a bowl, combine the large shrimp, salt, and black pepper. Toss to coat and let it sit for about 15 minutes to marinate.

    Prepare Batter

    In another bowl, mix cornstarch, all-purpose flour, and a pinch of salt. In a separate bowl, whisk the egg and cold water together. Gradually add this mixture to the dry ingredients, stirring until you achieve a smooth batter.

Frying Shrimp

    Heat Oil

    In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 180°C (350°F).

    Dip and Fry Shrimp

    Dip each marinated shrimp into the batter, allowing the excess to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden and crispy.

    Drain and Serve

    Using a slotted spoon, remove the fried shrimp and place them on a plate lined with paper towels to drain excess oil. Repeat with remaining shrimp.

Preparing Sweet Chili Sauce

    Combine Ingredients

    In a small saucepan, combine the sweet chili sauce, soy sauce, lime juice, minced garlic, and chili flakes (if using).

    Heat Sauce

    Cook over low heat for about 5 minutes, stirring occasionally until warmed through. Do not let it boil.
