    Prepare the Ingredients

    Wash and chop the eggplant into cubes, trim and halve the green beans, and slice the bamboo shoots. Tear the basil leaves and set aside.

    Heat the Oil

    In a large pot or wok, heat the vegetable oil over medium heat. Ensure the oil is hot but not smoking.

    Cook the Curry Paste

    Add the Thai green curry paste to the pot and cook for 1-2 minutes, stirring constantly until fragrant.

    Add Coconut Milk

    Pour in the coconut milk gradually while stirring to combine it with the curry paste. Bring to a gentle simmer.

    Add the Vegetables

    Stir in the cubed eggplant, green beans, bamboo shoots, and lime leaves. Simmer for about 10-15 minutes or until the vegetables are tender.

    Season the Curry

    Add the soy sauce, sugar, and salt to taste. Stir well to combine and let it simmer for another 5 minutes.

    Finally, add the fresh basil leaves and stir through the curry. Remove from heat.

    Serve the Jungle Curry hot over steamed rice or with rice noodles, garnished with additional basil if desired.
