Method
Preparation
- 1
Prepare the Duck
Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. This will help render the fat and ensure crispy skin.
- 2
- 3
Prepare the Sauce
In a small bowl, mix together soy sauce, fish sauce, oyster sauce, and sugar until combined. Set aside.
Cooking
- 4
Cook the Duck
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Place the duck breasts skin-side down and cook for 6-8 minutes, or until the skin is crispy and golden brown. Flip and cook for another 3-4 minutes, or until the duck is cooked to your desired doneness. Remove from the skillet and let rest.
- 5
Stir-fry the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add the onion, bell pepper, and mushrooms. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
- 6
Add the Sauce and Basil
Pour the prepared sauce over the stir-fried vegetables and mix well. Add the sliced fresh chili and basil leaves, and stir-fry for an additional 1-2 minutes until the basil is wilted.
- 7
Combine and Serve
Slice the rested duck breasts and add them to the skillet with the vegetables. Toss everything together until combined and heated through. Serve hot.
