Season the Duck
Rub the duck legs with salt and black pepper evenly on all sides. Let them marinate for at least 30 minutes.

Sear the Duck
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the duck legs skin-side down and sear until crispy and golden brown, about 6-8 minutes. Flip and sear the other side for another 4-5 minutes.

Cook the Duck
Reduce the heat to low, cover the skillet, and cook the duck for about 30-40 minutes until fully cooked and tender.
Choo Chee Sauce Preparation

Prepare the Sauce
In a saucepan, combine the red curry paste and coconut milk over medium heat. Stir until well mixed and bring to a gentle simmer.

Add Flavors
Stir in the fish sauce, palm sugar, and lime leaves. Allow the sauce to simmer for 10 minutes, stirring occasionally.

Add Vegetables
Slice the red bell pepper into thin strips and add it to the sauce. Continue to simmer for an additional 5 minutes until the peppers are tender.

Finish the Sauce
Finally, add the basil leaves and stir until just wilted. Remove from heat.
Assembly

Serve the Duck
Once the duck is cooked, remove it from the skillet and let it rest for a few minutes. Then, slice the duck legs into pieces.

In a serving plate, arrange the duck slices and generously top with the choo chee sauce. Garnish with additional lime leaves if desired.
