Preparation
1. Soak the Noodles
In a large bowl, soak the flat rice noodles in hot water for about 30 minutes or until they are softened. Drain and set aside.
2. Prepare Vegetables
While the noodles are soaking, chop the bell pepper and onion into thin strips. Mince the garlic cloves and set aside with the vegetables.
Cooking
3. Make the Sauce
In a small bowl, combine the chili paste, soy sauce, oyster sauce, sugar, and lime juice. Mix well and set aside.
4. Stir-Fry Vegetables
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
5. Add Bell Pepper and Onion
Add the chopped bell pepper and onion to the skillet. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.
6. Add Noodles and Sauce
Add the soaked noodles to the skillet with the vegetables. Pour the prepared sauce over the noodles and toss everything together until the noodles are evenly coated and heated through, about 3-5 minutes.
7. Finish with Basil
Remove the skillet from heat and stir in the fresh basil leaves until they are wilted.
