Chicken Marinade

    Prepare the Marinade

    In a mixing bowl, combine soy sauce, coconut milk, brown sugar, minced garlic, grated ginger, lime juice, ground coriander, ground cumin, salt, and black pepper. Mix well.

    Marinate the Chicken

    Cut the chicken breast into thin strips. Add the chicken to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

Grilling Chicken

    Prepare the Grill

    Preheat your grill or grill pan over medium-high heat. If using skewers, soak them in water to prevent burning.

    Grill the Chicken

    Thread the marinated chicken strips onto skewers. Grill the chicken for about 6-8 minutes on each side, or until fully cooked and slightly charred. Remove from the grill and let rest.

    In a small saucepan, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and chili flakes over low heat until smooth and warmed through. Adjust seasoning as necessary.

Preparing Cucumber Sauce

    Mix the Cucumber Sauce

    In a bowl, combine diced cucumber, yogurt, chopped mint leaves, lime juice, and salt. Mix well to combine.

Serving
