Rinse the yellowtail fillets under cold running water and pat them dry with paper towels. This step helps to remove any residual scales and ensures the fish is ready for seasoning.

In a small bowl, mix together the sesame oil, soy sauce, salt, and black pepper. Brush this mixture generously over both sides of the yellowtail fillets to enhance the flavor.

Prepare the Sesame Seeds
In a dry skillet over medium heat, toast the sesame seeds for about 2-3 minutes, stirring frequently until they become fragrant and lightly golden. This will enhance their flavor.

Heat a non-stick skillet over medium-high heat. Once hot, add the seasoned yellowtail fillets and cook for about 3-4 minutes on each side or until the fish is cooked through and flakes easily with a fork.

Once the yellowtail is cooked, remove it from the skillet and place it on a serving plate. Spoon a small amount of caviar on top of each fillet.
