    Preparation of Duck

    Pat the duck breasts dry with paper towels. Score the skin in a diamond pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Searing Duck

    In a skillet over medium heat, add olive oil. Once the oil is hot, place the duck breasts skin-side down. Sear for about 6-8 minutes until the skin is crispy and browned. Flip the duck breasts and sear for another 3-4 minutes. Remove and let rest.

    Cooking Butternut Squash

    In the same skillet, add chopped onion and minced garlic, sautéing for about 2-3 minutes until fragrant. Add the diced butternut squash and vegetable broth, stirring to combine.

    Simmering

    Cover the skillet and let the mixture simmer for about 15-20 minutes, or until the squash is tender. Stir occasionally and add more broth if necessary.

    Adding Flavor

    Once the squash is tender, stir in the toasted pumpkin seeds, chopped sage, and balsamic vinegar. Cook for an additional 2 minutes to heat through.

    Serving

    Slice the rested duck breasts against the grain. Serve over the butternut squash mixture, garnishing with additional sage if desired.
