Cooking Instructions

  1. 1

    Prepare the Celery Root

Peel the celery root with a vegetable peeler or knife, removing the tough outer skin. Cut it into small cubes, about 1/2 inch in size, and set aside.

  2. 2

    Mince the Ginger

Peel the fresh ginger and mince it finely. Set aside.

  3. 3

    Chop the Thyme

Rinse the fresh thyme leaves under cold water, pat dry, and chop them coarsely. Set aside.

  4. 4

    Sauté the Ingredients

In a large pot, heat the olive oil over medium heat. Add the minced ginger and sauté for 1-2 minutes until fragrant. Add the chopped celery root and sauté for another 5 minutes, stirring occasionally.

  5. 5

    Add Broth and Seasoning

Pour in the vegetable broth, add salt, and black pepper. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the celery root is tender.

  6. 6

    Add Thyme and Lemon Juice

Once the celery root is tender, stir in the chopped thyme and lemon juice. Cook for an additional 5 minutes to allow the flavors to meld.

  7. 7

    Blend (Optional)

For a smooth texture, you can use an immersion blender to puree the mixture directly in the pot, or transfer it in batches to a countertop blender. Blend until smooth.

  8. 8

    Serve

Ladle the soup into bowls and serve hot. Add extra thyme on top for garnish if desired.
