Prepare the Celery Root
Peel the celery root with a vegetable peeler or knife, removing the tough outer skin. Cut it into small cubes, about 1/2 inch in size, and set aside.

Mince the Ginger
Peel the fresh ginger and mince it finely. Set aside.

Chop the Thyme
Rinse the fresh thyme leaves under cold water, pat dry, and chop them coarsely. Set aside.

Add Broth and Seasoning
Pour in the vegetable broth, add salt, and black pepper. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the celery root is tender.

Once the celery root is tender, stir in the chopped thyme and lemon juice. Cook for an additional 5 minutes to allow the flavors to meld.

For a smooth texture, you can use an immersion blender to puree the mixture directly in the pot, or transfer it in batches to a countertop blender. Blend until smooth.
