Prepare the Daikon
Peel and julienne the daikon radish into thin strips. Place them in a bowl and sprinkle with a pinch of salt. Let them sit for about 10 minutes to draw out moisture.

Make the Marinade
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper. Stir in the chopped fresh tarragon until well combined.

Marinate the Bass
Place the bass fillets in a shallow dish and pour the marinade over them. Let them marinate for 15-20 minutes.

Serve
Once cooked, remove the bass from the heat and let it rest for 2 minutes. Serve the bass on a plate topped with the julienned daikon and a sprinkle of sesame seeds.
