Batter Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

    Separate Eggs

    In another bowl, separate the egg yolks and egg whites. Set the egg whites aside for later use.

    Combine Wet Ingredients

    In the bowl with the egg yolks, add milk and melted unsalted butter. Whisk until smooth.

    Combine Both Mixtures

    Pour the wet ingredient mixture into the bowl of dry ingredients. Stir until just combined, being careful not to overmix.

    Whip Egg Whites

    Using a hand mixer or a whisk, beat the egg whites until stiff peaks form. Gently fold the whipped egg whites into the batter until no white streaks remain.

Cooking Aebleskiver

    Preheat Aebleskiver Pan

    Place an aebleskiver pan over medium heat and add a small amount of unsalted butter to each well.

    Fill the Wells

    Once the butter has melted, pour batter into each well, filling them about 2/3 full.

    Cook and Flip

    Cook for approximately 2-3 minutes until the bottom is golden brown. Use a skewer or fork to carefully flip each aebleskiver over and cook for another 2-3 minutes until golden brown on all sides.

    Repeat Cooking

    Continue the process until all batter is used, adding more butter to the pan as necessary.

Serving

    Plate the Aebleskiver

    Transfer the cooked aebleskiver to a serving plate.

    Add Toppings

    Top each aebleskiver with a dollop of crème fraîche and a small spoonful of caviar. Garnish with finely chopped fresh chives.

    Serve the aebleskiver warm as an appetizer or a unique breakfast option.
