Instructions

  1. 1

    Prepare the Salmon

In a bowl, combine the soy sauce, mirin, sugar, and sesame oil. Mix until the sugar is dissolved. Add the raw salmon fillet and ensure it is completely submerged in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.

  2. 2

    Cook the Egg

While the salmon is curing, boil the eggs in a pot of water for about 7 minutes for soft boiled or 10 minutes for hard boiled. Once done, cool them in ice water, peel, and set aside.

  3. 3

    Prepare the Rice

Make sure the rice is cooked and warm. You can use freshly cooked rice or reheat leftover rice.

  4. 4

    Serve

Once the salmon is cured, remove it from the marinade and slice it thinly. In a serving bowl, place a generous portion of warm rice, top with sliced salmon, halved boiled eggs, chopped green onions, and a sprinkle of toasted sesame seeds. If desired, cut the seaweed sheets into strips and serve on the side or on top.
