Prepare the Filling
In a large bowl, combine cooked sweet potato noodles, cabbage, grated carrot, chopped green onion, crumbled tofu, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are combined.

Assemble the Dumplings
Lay out a dumpling wrapper on a clean surface. Place about 1 tablespoon of the filling mixture in the center of the wrapper. Moisten the edges with water, fold the wrapper over the filling to form a half-moon shape, and press to seal. Repeat with the remaining wrappers and filling.

Fry the Dumplings
In a deep frying pan, heat vegetable oil over medium-high heat. Once hot, carefully add the dumplings in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve hot with dipping sauce of your choice.
