Prepare the Spam
Slice the Spam into thin strips. Heat a non-stick skillet over medium heat and fry the Spam until it is crispy on the edges, about 2-3 minutes per side. Set aside.

Mix the Rice
In a large bowl, combine the cooked white rice with sesame oil and salt. Mix well to ensure the rice is seasoned evenly.

Assemble the Gimbap
Lay a sheet of nori on a bamboo mat or clean surface. Spread a layer of the seasoned rice on the nori, leaving about an inch at the top. Place a few strips of Spam, sautéed carrot, cucumber, and pickled radish across the center of the rice.

Roll the Gimbap
Using the bamboo mat, roll the gimbap tightly from the bottom to the top, applying gentle pressure to keep it compact. Once rolled, use a sharp knife to slice the roll into bite-sized pieces.

Sprinkle the slices with toasted sesame seeds and serve with additional pickled radish on the side, if desired.
