    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool slightly and mix in the sesame oil and salt.

    While the rice is cooling, prepare the fillings. Julienne the carrot and cucumber, and slice the avocado. Make sure the kimchi is chopped into bite-sized pieces.

    Assemble the Gimbap

    Lay a sheet of nori on a bamboo mat or clean surface, shiny side down. Spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Layer the kimchi, carrot, cucumber, and avocado in a line across the center of the rice.

    Roll the Gimbap

    Using the bamboo mat, carefully roll the gimbap away from you, applying gentle pressure to keep the roll tight. Seal the edge of the nori with a little water.

    Use a sharp knife to slice the rolled gimbap into bite-sized pieces. Sprinkle with toasted sesame seeds and serve with extra kimchi on the side.
