Prepare the Glass Noodles
Soak the sweet potato glass noodles in warm water for about 30 minutes until they are soft. Drain and set aside.

Season the Noodles
In a bowl, mix the softened noodles with salt and pepper. Adjust seasoning to taste.

Wrap the Noodles
Take a sheet of seaweed, place a portion of the seasoned noodles on the bottom half, and roll it tightly, sealing the edges with a little water.

Prepare the Tempura Batter
In a bowl, combine the tempura batter mix with water until smooth. The consistency should be thick enough to coat the wrapped noodles.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil to about 180°C (350°F).

Fry the Gimmari
Dip each wrapped noodle roll into the tempura batter, then carefully place it into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Serve
Cut the fried Gimmari into bite-sized pieces and serve hot with a dipping sauce of your choice.
