    Marinate the Beef

    In a bowl, combine the soy sauce, sugar, sesame oil, and minced garlic. Add the sliced beef and mix well. Marinate for at least 30 minutes.

    Heat a skillet over medium-high heat. Add the marinated beef and cook until browned and cooked through, about 5-7 minutes. Set aside to cool.

    Prepare the Vegetables

    In a bowl, combine the julienned carrot, cucumber, blanched spinach, and pickled radish. Toss gently to mix.

    Assemble the Gimbap

    On a bamboo mat, place a sheet of nori, shiny side down. Spread 1/2 cup of cooked rice over the nori, leaving a 1-inch border at the top. Layer with a portion of the cooked beef and vegetable mixture. Sprinkle with toasted sesame seeds.

    Roll the Gimbap

    Using the bamboo mat, carefully roll the gimbap away from you, pressing gently to form a tight roll. Moisten the edge of the nori with a little water to seal the roll.
