Cooking the Pork Belly
1. Prepare the marinade
In a large pot, combine water, soy sauce, sugar, crushed garlic, ginger slices, black peppercorns, star anise, and chopped green onions. Bring the mixture to a boil.
2. Simmer the pork belly
Add the pork belly to the boiling marinade. Reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the pork is tender.
3. Cool and slice
Once cooked, remove the pork belly from the pot and let it cool slightly. Slice into thin pieces.
