Prepare the Patties
In a large bowl, combine the ground chuck and ground brisket. Form the mixture into four equal patties, making a slight indentation in the center of each patty to prevent it from puffing up during cooking.

Add Cheese
Once flipped, place a slice of gouda cheese on each patty. Cook for an additional 2 minutes, allowing the cheese to melt.

Toast the Buns
While the burgers are cooking, toast the brioche buns in a separate pan until golden brown.

Assemble the Burgers
Spread mayonnaise on the bottom half of each toasted bun, followed by a lettuce leaf, a slice of tomato (sliced), the cheeseburger patty, a tablespoon of onion jam, and the top half of the bun.
