Preparation

    Prepare the Shrimp

    In a mixing bowl, season the shrimp with salt and black pepper. Set aside.

    Coat the Shrimp

    In a separate bowl, combine flour and cornmeal. Dredge each shrimp in the flour mixture until fully coated.

    Heat the Oil

    In a large skillet, heat vegetable oil over medium-high heat until hot.

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches. Fry until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

    Assemble the Po'Boy

    Slice the New England rolls lengthwise, but not all the way through. Spread cannon sauce on both sides of the roll.

    Add Fillings

    Layer the fried shrimp, shredded lettuce, and tomato slices inside the rolls.

    Serve

    Serve immediately with a side of fries.
