Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well until combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes until lightly golden. Remove from oven and allow to cool.

Make the Filling
In a large bowl, whisk together sweetened condensed milk, key lime juice, and egg yolks until smooth and well combined. Pour the filling into the cooled graham cracker crust.

Bake the Pie
Bake the pie in the preheated oven for 15-18 minutes until the filling is set. Remove from oven and let it cool to room temperature, then refrigerate for at least 3 hours or until chilled.

Prepare the Whipped Cream
In a mixing bowl, beat heavy whipping cream and powdered sugar together on medium-high speed until stiff peaks form.

Prepare the Candied Lime
In a small saucepan, combine sugar and water. Bring to a boil, then reduce heat to a simmer. Add lime slices and simmer for 15-20 minutes until translucent. Remove and allow to cool on parchment paper.

Serve
Once the pie is chilled, top with whipped cream, garnish with lime zest, and add candied lime slices on top. Slice and serve.
