    Prepare the Ingredients

    Rinse the perch fillets and pat them dry with paper towels. Season with salt and black pepper on both sides. Chop the red onion and trim the asparagus.

    Coat the Perch

    Spread the cornmeal on a plate. Dredge each perch fillet in the cornmeal, ensuring both sides are evenly coated.

    Sauté the Asparagus

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus and sauté for about 5-7 minutes until tender. Remove from the skillet and set aside.

    Cook the Perch

    In the same skillet, add the remaining tablespoon of olive oil. Heat over medium-high heat. Once hot, add the coated perch fillets. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Remove and keep warm.

    Make the Brown Butter Sauce

    In a separate saucepan, melt the butter over medium heat. Continue to cook, stirring frequently, until the butter turns brown and has a nutty aroma (about 5-7 minutes). Add the capers and red onions to the brown butter and cook for an additional 2-3 minutes.

    Serve

    Plate the perch fillets alongside the sautéed asparagus. Drizzle the brown butter sauce with capers and red onions on top. Serve with a side of mashed potatoes.
