Mix

Method

Prepare glass & garnish

1

Optional toasted coconut rim

If using, lightly wet the glass rim with a lime wedge, then dip the rim into toasted coconut flakes on a small plate so flakes adhere. Set the glass aside to dry briefly.

2

Fill a Collins or highball glass with crushed ice and set aside while you mix the cocktail.

Mix

3

Add pau maui vodka (2 oz), guava puree (1.5 oz), fresh lime juice (0.75 oz), coconut cream (0.5 oz), optional simple syrup (0.25 oz) and 2 dashes of orange bitters into a cocktail shaker.

4

Add enough ice to the shaker (about 6 oz or a full shaker tin) and secure the lid.

5

Shake vigorously for 12–18 seconds until the shaker is well chilled and the coconut cream is fully emulsified with the fruit for a silky texture.

6

Strain the cocktail over the prepared glass filled with crushed ice. Use a fine strainer if the guava puree has large fibers or seeds.

7

Garnish with a lime wheel and a thin guava slice on the rim or floated on top.

Finish

8

Serve immediately. Optional: add an extra dash of orange bitters on the foam/top for aroma.
