Salmon Salad Directions
- 1
Prepare the Salmon
Preheat your oven to 375°F (190°C).
- 2
Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil, and season with salt and black pepper.
- 3
Bake the salmon in the preheated oven for 15-20 minutes, or until it flakes easily with a fork. Remove from oven and let it cool slightly.
- 4
Prepare the Vegetables
While the salmon is baking, wash and prepare the vegetables.
- 5
In a large salad bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and diced avocado.
- 6
Make the Dressing
In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, Dijon mustard, salt, and black pepper until well combined.
- 7
If using fresh dill, chop it finely and add it to the dressing mixture.
- 8
Assemble the Salad
Once the salmon has cooled slightly, flake it into bite-sized pieces and add it to the salad bowl.
- 9
Drizzle the dressing over the salad and gently toss to combine all ingredients.
- 10
Serve immediately and enjoy your fresh salmon salad!
