Ancho Spiced Rotisserie Turkey Ingredients

Method

Ancho Spiced Rotisserie Turkey Directions

  1. 1

    Prepare the Turkey

Thaw the turkey if frozen and remove the giblets from inside the cavity. Pat the turkey dry with paper towels.

  2. 2

    Make the Spice Rub

In a large bowl, combine ancho chili powder, smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper. Mix well to create a spice rub.

  3. 3

    Season the Turkey

Rub the spice mixture all over the turkey, including under the skin and inside the cavity. Ensure the turkey is evenly coated.

  4. 4

    Prepare the Marinade

In a separate bowl, mix olive oil, fresh lime juice, and chopped cilantro. This will be used to marinate the turkey.

  5. 5

    Marinate the Turkey

Place the seasoned turkey in a large resealable plastic bag or a container. Pour the marinade over the turkey, ensuring it is well coated. Seal the bag or cover the container and refrigerate for at least 4 hours, preferably overnight.

  6. 6

    Preheat the Rotisserie

Preheat the rotisserie according to the manufacturer’s instructions.

  7. 7

    Prepare the Cooking Liquid

In a large pot, mix chicken broth and water. Bring to a simmer and keep warm.

  8. 8

    Cook the Turkey

Place the marinated turkey on the rotisserie spit and secure it. Cook the turkey in the rotisserie for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (75°C). Baste with the warm broth mixture every 30 minutes.

  9. 9

    Rest and Serve

Once cooked, remove the turkey from the rotisserie and let it rest for 20 minutes before carving. Serve with your choice of sides.
