Slice the pluots into wedges and combine them in a bowl with brown sugar, lemon juice, cinnamon, and baharat spice mix. Let them sit for about 15 minutes to macerate.

Layer the sautéed pluots on top of the almond cake batter. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes or until a toothpick comes out clean.

In a blender, combine farm cheese, heavy cream, sugar, vanilla extract, and a pinch of salt. Blend until smooth and creamy. Chill in the refrigerator for 1 hour, then churn in an ice cream maker according to the manufacturer's instructions.
