Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Make the cheesecake filling
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the sugar, sour cream, and vanilla extract. Mix until well combined. Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust and spread it evenly. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.

Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

Add toppings
Before serving, drizzle the caramel and hot fudge sauces over the top of the cheesecake. Sprinkle with chopped pecans.
