1. Prepare the Strawberries
Wash and hull the fresh strawberries. Slice them and place in a bowl. Sprinkle with 1 tablespoon of granulated sugar and let them sit to macerate for about 15 minutes.
2. Make the Biscuit Dough
Preheat the oven to 425°F (220°C). In a large mixing bowl, combine the flour, 1 tablespoon of granulated sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
3. Add Cream
Stir in the heavy cream just until the dough comes together. Do not overmix.
4. Shape and Bake
Turn the dough out onto a floured surface, knead gently 5-6 times, then pat into a 1-inch thick round. Cut into rounds using a biscuit cutter and place on a baking sheet. Bake for 12-15 minutes or until golden brown.
5. Prepare the Whipped Cream
In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
6. Assemble the Shortcake
Once the biscuits are baked and cooled slightly, slice them in half horizontally. Layer the bottom half with macerated strawberries, then add a generous dollop of whipped cream, and place the top half of the biscuit on top. Serve immediately.
