    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Wash and scrub the Russet potatoes thoroughly. Prick each potato with a fork several times and place them on a baking sheet. Bake for about 45-60 minutes, or until tender when pierced with a knife. Remove from the oven and let cool slightly.

    Prepare the Potato Skins

    Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Carefully scoop out the flesh, leaving about 1/4 inch of potato on the skin. Brush the insides of the potato skins with olive oil, and sprinkle with salt and black pepper.

    Bake the Skins

    Place the potato skins back on the baking sheet, skin side up. Bake for an additional 15-20 minutes, or until crispy and golden brown.

    Add Fillings

    Remove the potato skins from the oven. Sprinkle the shredded cheddar cheese and chopped bacon into each skin. Return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven and top with sliced green onions. Serve hot with sour cream on the side.
