Soup Base

Method

Preparation

  1. 1

    Sauté Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

  2. 2

    Add Garlic and Deglaze

Add the minced garlic and cook for an additional 2 minutes. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

  3. 3

    Simmer the Broth

Add the beef broth, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

  4. 4

    Prepare the Bread and Cheese

While the soup simmers, preheat your oven to 350°F (175°C). Slice the baguette into thick slices and toast them lightly. Grate the cheese.

  5. 5

    Assemble and Bake

Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top of each bowl, and generously sprinkle with grated cheese. Place the bowls on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
