1. Caramelize the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes until they are golden brown and caramelized.

2. Deglaze the Pot

Add the dry white wine to the pot and scrape up any browned bits from the bottom. Let it simmer for 5 minutes to reduce slightly.

3. Add Broth and Seasoning

Pour in the beef broth, add bay leaves, thyme, salt, and black pepper. Bring the soup to a boil, then reduce heat and let it simmer for 20-30 minutes.

4. Prepare the Bread

While the soup simmers, preheat the oven to 350°F (175°C). Slice the French baguette into thick pieces and place them on a baking sheet. Toast in the oven for about 10 minutes until crispy.

5. Serve the Soup

Remove the bay leaves from the soup. Ladle the soup into bowls, top each with a slice of toasted baguette and sprinkle with Gruyère cheese. Place under the broiler for 2-3 minutes until the cheese is bubbly and golden.
