Prepare the Crab Stuffing
In a skillet, melt 2 tablespoons of butter over medium heat. Add shallots and garlic, sautéing until soft and fragrant. In a mixing bowl, combine the crabmeat, sautéed shallots and garlic, parsley, lemon juice, salt, and pepper. Gently fold in half of the bread crumbs to bind the mixture.

Stuff the Haddock
Preheat the oven to 375°F (190°C). Lay the haddock fillets on a greased baking dish. Spoon the crab mixture onto the center of each fillet. Fold the sides of the fillet over the stuffing to encase it.

Top with Bread Crumbs
Melt the remaining 2 tablespoons of butter and mix it with the remaining bread crumbs. Sprinkle this mixture over the stuffed haddock.

Bake the Haddock
Bake in the preheated oven for 20-25 minutes, or until the haddock is cooked through and the topping is golden brown.

Serve
Remove from the oven, let it cool slightly, and serve with warm hollandaise sauce drizzled on top.
