Main Entrée 1: Herb Roasted Chicken

Main Entrée 2: Creamy Mushroom Risotto

Method

Herb Roasted Chicken

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Prepare the Chicken

In a bowl, mix olive oil, rosemary, thyme, minced garlic, lemon juice, lemon zest, salt, and pepper. Rub this mixture all over the chicken, ensuring it's well coated.

  3. 3

    Roast the Chicken

Place the chicken in a roasting pan and roast in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Let it rest for 10 minutes before carving.

Creamy Mushroom Risotto

  1. 4

    Sauté the Aromatics

In a large saucepan, heat olive oil over medium heat. Add the chopped onions and garlic, sauté until translucent.

  2. 5

    Cook the Mushrooms

Add the sliced mushrooms and cook until they release their moisture and become golden brown.

  3. 6

    Add Rice

Stir in the Arborio rice and cook for about 2 minutes until the rice is lightly toasted.

  4. 7

    Add Broth Gradually

Begin adding the vegetable broth, one ladle at a time. Stir frequently and allow the rice to absorb the liquid before adding more. Continue this process for about 20-25 minutes or until the rice is creamy and al dente.

  5. 8

    Finish the Risotto

Stir in the grated Parmesan cheese, salt, and pepper. Adjust seasoning to taste and serve warm.
