Prepare the crust
Preheat your oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, 1/4 cup of the granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the remaining 1/4 cup of granulated sugar and continue to mix until well combined. Add sour cream, vanilla extract, and flour, mixing until smooth. Finally, add the eggs one at a time, mixing on low speed until just combined.

Bake the cheesecake
Pour the cream cheese filling over the cooled crust in the springform pan. Bake in the preheated oven for about 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for an hour.

Cool and serve
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight. Before serving, you can top it with fresh fruit or a fruit sauce if desired.
