Prepare the Chicken
Rub the boneless chicken breasts with olive oil and season both sides with Cajun seasoning, salt, and black pepper.

Cook the Chicken
Heat a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until cooked through and blackened. Remove from heat and let rest.

Make the Tomato Pepper Mayonnaise
In a small bowl, combine mayonnaise and diced roasted red peppers. Mix well and set aside.

Assemble the Sandwich
Slice the French bread in half. Spread the tomato pepper mayonnaise on both sides of the bread. Layer with lettuce, sliced tomatoes, and the blackened chicken. Close the sandwich.

Cut the sandwich in half if desired and serve immediately.
