Salmon Patties

    Prepare the Salmon

    Start by preheating your oven to 375°F (190°C). Then, remove the skin and any bones from the salmon fillet. Chop it into small pieces or pulse it in a food processor until finely chopped.

    Mix the Ingredients

    In a large mixing bowl, combine the chopped salmon, bread crumbs, egg, finely chopped green onion, minced garlic, dijon mustard, salt, and black pepper. Mix well until all ingredients are evenly combined.

    Form the Patties

    Using your hands, form the mixture into small patties, about 2-3 inches in diameter. You should be able to make approximately a dozen patties.

    Cook the Patties

    Heat olive oil in a large skillet over medium heat. Once hot, add the salmon patties (in batches if necessary) and cook for about 4-5 minutes on each side, or until golden brown and cooked through.

Lemon Basil Aioli

    Prepare the Aioli

    In a blender or food processor, combine mayonnaise, lemon juice, fresh basil leaves, minced garlic, and salt. Blend until smooth and creamy. Taste and adjust seasoning if necessary.

Assemble the Sliders

    Prepare the Toppings

    Slice the large tomato into thin slices. Rinse the arugula under cold water and pat dry.

    Build the Sliders

    On a slider bun, place a salmon patty, top it with arugula, a slice of tomato, and drizzle with lemon basil aioli. Top with the other half of the bun.
