Method

Garlic Butter Preparation

  1. 1

    Make the Garlic Butter

In a small saucepan over low heat, melt the unsalted butter. Add minced garlic, chopped parsley, and salt. Stir well and cook for about 2-3 minutes until fragrant. Remove from heat and set aside.

Cheese Preparation

  1. 2

    Prepare the Cheeses

Grate the Parmesan cheese, shred the mozzarella cheese, and slice the provolone cheese. Set aside.

Roasting Tomatoes

  1. 3

    Roast the Grape Tomatoes

Preheat the oven to 400°F (200°C). On a baking sheet, toss the grape tomatoes with olive oil, salt, and black pepper. Spread them out in a single layer and roast for 20-25 minutes, until they burst and caramelize.

Roasting Garlic

  1. 4

    Roast the Garlic

While the tomatoes are roasting, cut the top off the whole garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and roast in the oven for about 30-35 minutes until soft and caramelized.

Making Basil Pesto

  1. 5

    Prepare the Basil Pesto

In a food processor, combine fresh basil leaves, pine nuts, grated Parmesan cheese, olive oil, and minced garlic. Blend until smooth. Taste and adjust seasoning with salt if needed.
