Prepare the Tartar Sauce

    Mix the Ingredients

    In a mixing bowl, combine mayonnaise, finely chopped dill pickles, capers, lemon juice, and fresh dill. Stir well until all ingredients are thoroughly mixed. Cover and refrigerate until ready to serve.

Prepare the Fries

    Cut and Soak the Potatoes

    Peel the russet potatoes and cut them into thick fries. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and pat the soaked fries dry. Fry the potatoes in batches for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, then season with salt.

Prepare the Fish

    Make the Batter

    In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold beer or sparkling water, whisking until smooth and well combined.

    Fry the Fish

    Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-6 minutes, or until golden brown and crispy. Remove from oil and drain on paper towels.

Serve

    Plating the Dish

    On a serving plate, arrange the crispy fried fish alongside the golden fries. Serve with the prepared tartar sauce on the side for dipping.
