Wagyu Sirloin Steak

    Prepare the Steak

    Take the Wagyu sirloin steaks out of the refrigerator and let them come to room temperature for about 30 minutes before cooking.

    Season the Steak

    Rub both sides of the steak with olive oil, then season generously with salt and black pepper.

    Make the Chimichurri Sauce

    Finely chop the fresh garlic cloves and parsley. In a bowl, mix the chopped garlic, parsley, red wine vinegar, red pepper flakes, and a pinch of salt. Drizzle in olive oil to combine until you reach your desired consistency.

    Cook the Steak

    Preheat a grill or skillet over high heat. Once hot, place the steaks on the grill/skillet and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

    Make the Smoked Paprika Caramel Sauce (Optional)

    In a saucepan, combine honey, smoked paprika, and a pinch of salt. Heat over medium-low, stirring continuously until the mixture thickens into a syrup consistency.

    Rest the Steak

    Once cooked, remove the steaks from the heat and let them rest for 5-10 minutes before slicing.

    Serve

    Slice the steak against the grain and serve with chimichurri sauce or drizzle with the smoked paprika caramel sauce.
